Food for these days of relentless fire.
I know it looks basic, but its kinda ideal for this weather.
Boiled new tatties, quick dry-fry then a last blast of heat with olive oil and garlic(less than a minute).
Top the carby base with some red peppers, red onion, spring onion and cherry tomatoes(halved). All roasted in the oven with a coating of paprika, chilli, bay, parsley, thyme, rosemary, sage, olive oil and white wine vinegar.
I made the same thing the other day with a cheeky bit of bacon, no bacon was needed, all the flavour is in the tomatoes.
I don’t know if this food has a name, so I’ll call it lunch.3 notes
